    Definitely check out openFrameworks:

    It’s C++, w/ a lot of the spirit of Processing. (There’s a lot of overlap between the user communities as well.)

    There are some working attempts to use Processing with JRuby (see the Processing discussion board). You probably already have stumbled on this.

    Then, there is the IMHO fantastic NodeBox: http://nodebox.net – not Ruby but Python based. And, YMMV, therefore in any case better than Java ;-) (currently OS X only, but other platforms, at least Linux, seem to be under development)

    And then, there are e. g. Fluxus: http://www.pawfal.org/fluxus/ (based on Scheme, cross-platform) and Impromptu: http://impromptu.moso.com.au/ (ditto, OS X).
